Abstract
U ovoj disertaciji prikazan je „bottom-up” pristup u formulisanju sistema za kontrolisanu dostavu bioaktivnih komponenti, polazeći od frakcije vodorastvornih polifenola majčine dušice (Thymus serpyllum L.) i njihove inkapsulacije u hidrogelove na bazi hitozana. Najpre je vršena karakterizacija polaznog ekstrakta majčine dušice, određivanjem ukupnog sadržaja polifenola (spektrofotomerijom u ultraljubičastoj oblasti), zatim određivanjem konkretnih polifenolnih jedinjenja prisutnih u ekstraktu (tečnom hromatografijom pod visokim pritiskom), kao i određivanjem sadržaja minerala (metodom indukovano spregnute plazme sa masenom spektrometrijom). Na kraju, procenjen je antioksidativni kapacitet ekstrakta korišćenjem spektrofotometrijske metode (ABTS)...
Presented thesis addresses the bottom-up approach in design of functional food ingredients starting with aqueous thyme (Thymus serpyllum L.) extract and its encapsulation within the chitosan-based hydrogels. Firstly, characterization of thyme extract was performed, in terms of determining total phenolic content (ultraviolet-visible spectrophotometry), particular polyphenolic compounds (high pressure liquid chromatography), as well as mineral content (inductively coupled plasma with mass spectroscopy). Finally, the antioxidant capacity of thyme extract was estimated (ABTS spectrophotometric method)...
