U savremenim uslovima poslovanja, zaštita proizvoda sa oznakom geografskog porekla predstavlja jednu od najvažnijih inicijativa, čiji je cilj promovisanje hrane sa teritorijalnim poreklom i koju proizvođači koriste kao sredstvo za diferencijaciju svojih proizvoda. Poslednjih godina u Srbiji promocija proizvoda sa geografskom oznakom dobija na značaju kao važan strateški element u razvoju prehrambenog sistema. Predmet istraživanja doktorske disertacije odnosi se na analizu uticaja oznake geografskog porekla i atributa sira na percepciju i nameravano ponašanje potrošača. Istraživanje ima za cilj da identifikuje pokretače veće upotrebe sireva sa oznakom geografskog porekla (OGP) i procenu preferencija potrošača prema sirevima sa OGP. Istraživanje je fokusirano na oblast proizvoda sa oznakom geografskog porekla, zbog značaja koji ova oblasti ima za prehrambeni sektor Srbije, a posebno u izvozu i povećanju međunarodne konkurentnosti poljoprivrednih proizvođača. Glavni cilj rada jeste analiz...a glavnih determinanti Teorije planiranog ponašanja (TPB) potrošača koje utiču na nameru srpskih potrošača u pogledu kupovine sireva sa OGP.
Rezultati istraživanja stavova i preferencija potrošača potvrdili su polazne hipoteze u radu. Nalazi modela strukturnih jednačina (SEM modela) ukazuju da svi latentni konstrukti imaju direktne pozitivne efekte i suštinski predviđaju nameru ponašanja i potvrđuju upotrebu TPB u objašnjavanju namera za kupovinu sireva sa OGP. Utvrđeno je da su stavovi, subjektivne norme, percipirana kontrola ponašanja, poverenje i lojalnost značajni prediktori namere za kupovinu sireva sa geografskom oznakom. Dodatno, identifikovano je da je percipirana kontrola ponašanja glavni pokretač namere kupovine sira sa OGP u Srbiji. Najvažniji kriterijum za potrošače prilikom odabira proizvoda jeste cena, što potvrđuju rezultati nekoliko sprovedenih statističkih tehnika.
U doktorskoj disertaciji koncipiran je nov metodološki okvir baziran na združenoj primeni statističkih metoda (faktorske analize, conjoint analize, klaster analize i SEM modela) u cilju definisanja optimalne tržišne pozicije proizvoda bazirane na preferencijama potrošača, i to na bolji način nego u do sada predloženim istraživanjima koji su prvenstveno koristili ove modele pojedinačno. Akademski doprinos ogleda se i u izuzetno korisnoj analizi uticaja promotivnih aktivnosti na ponašanje potrošača tradicionalne hrane. Metodološki okvir pronalazi značajnu primenu u akademskim istraživanjima i naučnoj zajednici, koja rezultate ovog istraživanja može iskoristiti kao okvir za dalja istraživanja koja uključuju proizvode sa geografskom oznakom. Dobijeni rezultati pružaju mogućnost marketing menadžerima i poljoprivrednim proizvođačima da steknu uvid u determinante koje utiču na potrošače prilikom kupovine sira i na taj način kreiraju strategije za pozicioniranje proizvoda sa geografskom oznakom. Na osnovu dobijenih rezultata može se izvesti nekoliko implikacija za poljoprivredne proizvođače kao i nosioce ekonomske politike u cilju daljeg razvoja inicijativa za podsticanje kupovine lokalno proizvedene hrane i kreiranja kampanja za promovisanje kupovine sireva sa geografskom oznakom. Povećanje broja proizvođača sa geografskom oznakom može da doprinese ispunjenju lokalne potražnje, kao i izvozu prehrambenih proizvoda sa geografskom oznakom na međunarodno tržište, kao što je tržište EU, koje generiše veliku tražnju za proizvodima sa OGP.
The protection of geographical indications is assertable the most important initiative, at least in Europe, aimed at promoting foods with territorial connections and as such has become the subject of analysis in marketing research. In the last few years in the Republic of Serbia the promotion of products with a geographical indication has gained importance as a significant strategic element in the development of the food system In line with this, the objective of the paper is to analyze the major determinants of TPB that influence Serbian consumers' intention to purchase GI cheeses. This paper sheds light on the reasons why consumers intend to buy GI cheese by uncovering the underlying customer intention and assessing consumer preferences for GI cheeses. The research is focused on the area of GI products, due to the importance this area has for the food sector of Serbia, especially in exports and increasing the international competitiveness of agricultural producers. The research results on consumer attitudes and preferences have confirmed the starting hypothesis in this paper. The findings of SEM analysis indicate that all latent constructs have direct positive effects and substantially predicting behavioral intention and confirm the use of TPB in explaining the intentions to purchase GI cheeses. Attitudes, subjective norms, perceived behavioral control, trust, and loyalty were found to be significant predictors of intention to purchase GI cheeses. Additionally, it was found that PBC was the main driver of the intention to purchase GI cheese in Serbia. Price was identified as the most important criterion for consumers when choosing a product, which is confirmed by the results of several statistical techniques.
In doctoral thesis, a new methodological framework was conceived based on the mutual application of statistical methods (factor analysis, conjoint analysis, cluster analysis, and SEM models) in order to determine the optimal market position of the product based on consumer preferences, in a better way than was proposed in the previous researchs which used these methods individually. The academic contribution is also reflected in the useful analysis of the impact of promotional activities on the behavior of consumers of traditional food. Considering that there are only a few similar researches based on GI cheeses purchasing intention, the contributions of this research are to the scientific community, which may utilize the results of this research as a framework for further research. The obtained results provide an opportunity for marketing managers and agricultural producers to gain insight into the determinants which determine consumers when purchasing cheese and create strategies for positioning products with GIs. Based on the obtained results and the impediments identified in this paper, policymakers and municipalities can develop initiatives to encourage the purchase of locally grown food and devise campaigns to promote the purchase of GI cheeses. An increase in the number of GI farmers can contribute in furnishing the local demand as well as exporting GI food products to international markets such as the EU where GI food is in high demand.
