dc.description.abstractPredmet istraživanja ove doktorske disertacije bio je stabilizacija hladno presovanog suncokretovog ulja visokog nutritivnog kvaliteta dodatkom etarskih ulja i ekstrakata odabranih biljnih vrsta familija Lamiaceae i Apiaceae. Visok udeo linolne kiseline u masnokiselinskom sastavu čini hladno presovano suncokretovo ulje podložnim oksidaciji. Uticaj dodatka etarskih ulja i ekstrakata rtanjskog čaja, bosiljka, korijandera, anisa i kima na oksidativnu stabilnost ovog ulja je određen primenom više testova. Takođe, oksidativni status, promena boje i senzorna svojstva uzoraka sa dodatkom ekstrakata i etarskih ulja su praćeni tokom višemesečnog skladištenja na sobnoj temperaturi bez prisustva svetlosti i poređeni sa polaznim uzorkom i međusobno. Etarska ulja su izolovana metodom hidrodestilacije dok su ekstrakti pripremljeni korišćenjem 70 % i 96 % rastvora etanola maceracijom pomoću ultrazvuka (UZM) i ekstrakcijom po Soksletu (SE). Pored karakterizacije etarskih ulja u smislu hemijskog sastava i određivanja sadržaja ukupnih fenolnih jedinjenja i flavonoida u etanolnim ekstraktima, ispitana je i njihova antioksidativna i antibakterijska aktivnost. Biljke familije Lamiaceae su pokazale veći antioksidativni potencijal u odnosu na biljke familije Apiaceae. Sa druge strane, ekstrakti dobijeni primenom 70 % rastvora etanola su bili bogatiji fenolnim komponentama i ispoljili veći antioksidativni efekat. Generalno, ekstrakti ispitivanih biljaka u poređenju sa etarskim uljima su imali izraženiju antioksidativnu aktivnost i bili učinkovitiji u smislu odlaganja oksidativnih promena u ulju, dok su etarska ulja efikasnije inhibirala testirane patogene bakterije. Rezultati ove disertacije nedvosmisleno potvrđuju da ekstrakti odabranih biljaka mogu biti iskorišćeni kao delotvorna, zdrava i ekološki prihvatljiva zamena sintetičkim aditivima. Produžen rok trajanja kao i specifične senzorne karakteristike aromatizovanih ulja ukazuju i na komercijalni značaj sprovedenih istraživanja.sr
dc.description.abstractThe subject of this doctoral thesis was the stabilization of the cold pressed sunflower oil of high nutritional value using essential oils and extracts of selected plant species of the families Lamiaceae and Apiaceae. The high content of linoleic acid in its fatty acid content makes the cold pressed sunflower oil prone to oxidation. The influence of addition of the essential oils and extracts of savory, basil, coriander, anise and caraway is determined using several assays. Also, oxidation status, changes in color and sensor properties of the samples with essential oils and extracts were monitored in the course of several months of storage at room temperature, protected from light and compared with the original sample and between each other. Essential oils were obtained by hydrodistillation method while extracts were prepared using 70 % and 96 % ethanol solutions by ultrasonic assisted maceration (UAM) and Soxhlet extraction (SE). Along with the chemical composition of the essential oils and total phenolic and flavonoid contents in the ethanolic extracts, their antioxidant and antibacterial activity has been examined. The tested Lamiaceae displayed higher antioxidant potential compared to the Apiaceae plants. Also, the 70 % ethanol extracts were richer in phenolic components and exhibited a greater antioxidant effect. Generally, the extracts of examined plants had a more pronounced antioxidant activity compared to essential oils and were more effective in terms of delaying oxidative changes in the oil, whereas the essential oils more efficiently inhibited the tested pathogenic bacteria. The results of this dissertation unequivocally confirm that the extracts of the selected plants can be used as an effective, healthy and environmentally acceptable alternative to synthetic additives. The longer shelf life and the unique sensory properties of the aromatised oils indicate also the commercial aspect of the conducted research.en
