dc.description.abstractIstraživanja u okviru ove doktorske disertacije sprovedena su sa osnovnim ciljem razvoja derivata pektina unapređene funkcionalnosti u odnosu na primenu ovog polisaharida kao sorbenta i materijala za izradu ambalažnih filmova. U prvom delu rada opisan je postupak modifikacije pektina u reakciji esterifikacije sa acil-dihloridima, nakon čega su ispitana svojstva dobijenih acilovanih derivata sintetisanih pri različitim molarnim odnosima agensa za acilaciju i galakturonske kiseline. Utvrđeno je da promene u strukturi utiču na reološka, termička i morfološka svojstva pektina, kao i na interakcije koje se uspostavljaju u vodenim rastvorima. U cilju detaljnog sagledavanja svih parametara koji mogu imati uticaj na sorpciju pektina i njegovih derivata, u drugom delu rada ispitan je uticaj specifičnih anjona na umrežavanje nativnog pektina u vodenim rastvorima soli bakra. Analiza ovog uticaja rezultovala je uspostavljanjem analogije umrežavanja pektina sa relativnim uticajem anjona u vodenim rastvorima koje je opisano Hofmeister-ovom teorijom. Hidrofobnost acilovanih derivata, kao i mogućnost njihove primene kao sorbenata i materijala za izradu ambalažnih filmova, ispitana je u trećem delu rada. Dobijeni rezultati ukazuju da acil ostaci (C4-C10) u strukturi derivata utiču na povećanje hidrofobnosti nativnog pektina, što se može smatrati jednim od najznačajnijih rezultata proisteklih iz ove disertacije. Parametri procesa sorpcije Cu2+ jona iz vodenih rastvora ukazuju da acilovani derivati poseduju manji ravnotežni kapacitet u poređenju sa nativnim pektinom, pri čemu je utvrđeno da je vrednost ovog parametra uslovljena strukturom derivata. Filmovi na bazi acilovanih derivata pektina predstavljaju bolju barijeru za transport vodene pare, što se tumači kao posledica njihove povećane hidrofobnosti. Ipak, rezultati mehaničkih ispitivanja ukazuju da predložene modifikacije nemaju pozitivan uticaj na moguću primenu sintetisanih derivata kao materijala za izradu ambalažnih filmova.sr
dc.description.abstractThe main goal of the research conducted within this doctoral dissertation was development of pectin based derivatives with improved functionality when used as sorbents and packaging film material. The first part of this work reports modification procedure and characterization of the derivatives obtained by esterification of the neat pectin using di-acyl chlorides at different molar ratios. It was found that changes in structure affect rheological, thermal and morphological properties of pectin, as well as the interactions established in water solutions. In order to get the deeper insights into all parameters that could influence the sorption on pectin and its derivatives, the second part of this work reports the effect of specific anions on the cross-linking process of neat pectin in water solutions of copper salts. This analysis resulted in establishment of an analogy between pectin cross-linking and relative influence of anions in water solutions described by Hofmeister theory. The hydophobicity of acylated derivatives and their possibility to be used as sorbents and package film materials was investigated in the third part of this work. The obtained results indicate that acyl residues (C4-C10) cause the increase in hydrophobicity of neat pectin, which could be considered as one of the most significant result of this dissertation. The parameters that describe sorption of Cu2+ from aqueous solution suggest that acylated derivatives exhibit lower equilibrium capacity when compared to native pectin, and it was found that these parameters are dependent on derivatives structure. Due to the increased hydrophobicty of acylated pectin, the films based on these derivatives have improved water barrier properties. Still, the results obtained from mechanical testing indicate that proposed modification do not have positive influence on possible application of films based on acylated pectin as packaging material.en
